The number of people known to have celiac disease or food allergies is increasing, for a number of reasons, and this affects the caterer who previously received few requests for special diet accommodations and now is faced with more frequent requests in increasing numbers- but accommodation can be pricey. This hands on session provides an introduction to health and safety concerns of serving all attendees at an event, including those with celiac disease and food allergies, from preparation through serving, and offers tips for safely accommodating special diets without breaking the bank. We will learn what goes on behind the scenes in a dedicated gluten- and nut-free commercial bakery making and packaging certified gluten-free- and Top 8-free vegan- desserts to ensure food safety. Then we will practice our skills together and enjoy delicious rewards for our efforts!
